200C oven
Makes 9
In a large bowl, blend
2 c flour
3 tsp baking powder
1/2 tsp salt
Separately blend liquid ingredients
4 Tbs white sugar
1/4 c melted butter
2 eggs (& hold back a little white for topping)
1/2 c milk
Gradually add liquid to dry while stirring
Optional extras may include:
- 1/2 c softened raisins or currants
- 1/2 c cranberries & 1/4 c white chocolate
- 1 c grated cheese & dried chilli
Knead for a few minutes (add a little extra flour if too sticky)
Cut into 9 pieces
Form into balls and and shape into thick discs in palm of hand
Lay out on greased baking sheet
Brush egg white on top of each
Oven 200 C for 20 minutes
Cool on wire rack
(Split plain scones and stuff with whipped cream and jam or just add lashings of butter)

Lorna's Chocolate Chip Cookies
Make batter and refrigerate for an hour
16-18 large cookies
Creme
3/4 c soft salted butter
1 c packed brown sugar
1/2 c white sugar
1 Tbs vanilla
1 room temperature egg + 1 yolk
Add
1 bar dark chocolate sliced into small chunks
2 c flour + 1/2 tsp baking soda
Oven 165 C
Form into balls
Ungreased pan 3 inches apart
Bake for 13-15 minutes
Cool on sheet for 5 minutes before transferring to rack

The scone recipe can be adapted for gluten free, using Dove's Farm self-raising (or plain) gluten free flour. I used SR, and omitted the baking powder. I used lait ribot instead of ordinary milk. Otherwise I did it the same. Am waiting for the results to emerge from the oven!
